Citrus

Citrus otherwise known as hesperidic is the classical name for citrus ingredients. The main fruits are: lemon, lime, orange, bergamot, mandarin, pomelo and grapefruit. Extraction method is called expression and is only used for citrus fruits. The peel is removed and placed in a machine to be pulped and the oil from the peel is extracted.
